  • 4 ripe apricots, halved and pitted

  • 1 tbsp maple syrup or honey

  • ½ tsp vanilla extract

  • Optional: pinch of cinnamon or cardamom

Toppings

  • Greek or coconut yogurt

  • Toasted almonds or pumpkin seeds

  • Extra syrup for drizzling

Instructions

  1. Mix oats, chia, milk, vanilla, and sweetener. Chill overnight.
  2. Roast apricots with syrup and spices at 375°F for 20–25 min.
