Sugar Cookie Dough:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tsp vanilla extract

2¼ cups all-purpose flour

Lemonade Filling:

¾ cup granulated sugar

2 large eggs
-
½ cup fresh lemon juice (about 2–3 lemons)

1 tbsp lemon zest
-
2 tbsp all-purpose flour
Instructions
- Cream butter, sugar, egg, and vanilla. Mix in dry ingredients to form cookie dough.
- Whisk lemon juice, zest, sugar, eggs, and flour for the filling.
- Press ⅔ of dough into a greased 8×8 pan. Pour in lemon filling.
- Crumble remaining dough on top.
- Bake at 350°F for 30–35 mins until golden and just set. Cool before slicing.
