Sugar Cookie Lemonade Crumble – Bright, Buttery & Easy to Bake

Sugar Cookie Dough:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 2¼ cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp salt

Lemonade Filling:

  • ¾ cup granulated sugar

  • 2 large eggs

  • ½ cup fresh lemon juice (about 23 lemons)

  • 1 tbsp lemon zest

  • 2 tbsp all-purpose flour

Instructions

  1. Cream butter, sugar, egg, and vanilla. Mix in dry ingredients to form cookie dough.
  2. Whisk lemon juice, zest, sugar, eggs, and flour for the filling.
  3. Press ⅔ of dough into a greased 8×8 pan. Pour in lemon filling.
  4. Crumble remaining dough on top.
  5. Bake at 350°F for 30–35 mins until golden and just set. Cool before slicing.
