- 2½ lbs Yukon gold or russet potatoes, thinly sliced
- 2 tbsp unsalted butter (for greasing slow cooker)
- 2 cups heavy cream (or half-and-half)
- 1 cup shredded Gruyère or cheddar cheese
- 1 cup grated Parmesan (divided)
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp dried thyme or Italian seasoning
- Chopped fresh parsley (for garnish)
Instructions
- Grease slow cooker with butter.
- Mix cream, garlic, salt, pepper, and thyme in a bowl.
- Layer potatoes, sauce, and cheese in the slow cooker. Repeat for 2–3 layers.
- Cook on LOW for 4–5 hours, or HIGH for 2–3 hours until tender.
- Top with remaining Parmesan, cover for 10 mins, and garnish with parsley.
