2 medium sweet potatoes

2 tsp olive oil

½ red bell pepper, diced

¼ small onion, diced

2 eggs (or tofu scramble)

¼ cup shredded cheese (cheddar, feta, or mozzarella)

Salt & pepper, to taste

Optional: spinach, mushrooms, sausage, bacon, avocado, herbs
Instructions
- Preheat oven to 400°F (200°C). Pierce and roast sweet potatoes for 45–55 minutes, or microwave 8–10 minutes.
- While baking, sauté onions, peppers, and optional add-ins in olive oil.
- Slice cooked sweet potatoes lengthwise and scoop out a little center to create “boats.”
- Fill each with veggie mix and crack an egg on top (or use scrambled eggs).
- Return to oven for 10–12 mins (until egg sets). Add cheese in last 5 minutes.
- Garnish and serve warm.
