  • 2 medium sweet potatoes

  • 2 tsp olive oil

  • ½ red bell pepper, diced

  • ¼ small onion, diced

  • 2 eggs (or tofu scramble)

  • ¼ cup shredded cheese (cheddar, feta, or mozzarella)

  • Salt & pepper, to taste

  • Optional: spinach, mushrooms, sausage, bacon, avocado, herbs

Instructions

  1. Preheat oven to 400°F (200°C). Pierce and roast sweet potatoes for 45–55 minutes, or microwave 8–10 minutes.
  2. While baking, sauté onions, peppers, and optional add-ins in olive oil.
  3. Slice cooked sweet potatoes lengthwise and scoop out a little center to create “boats.”
  4. Fill each with veggie mix and crack an egg on top (or use scrambled eggs).
  5. Return to oven for 10–12 mins (until egg sets). Add cheese in last 5 minutes.
  6. Garnish and serve warm.
