Ingredients

  • 1 (15 oz) can chickpeas, rinsed and drained

  • ½ cup diced cucumber

  • ½ cup halved cherry tomatoes

  • ⅓ cup diced red onion

  • ¼ cup kalamata olives, sliced

  • ¼ cup crumbled feta (optional)

  • 2 tbsp parsley, chopped

  • 1 tbsp dill, chopped

  • Zest + juice of 1 lemon

  • 1½ tbsp olive oil

  • 1 garlic clove, minced

  • Salt & pepper to taste

  • Lettuce leaves or wraps for serving

  • Optional: hummus, sprouts, avocado, or tzatziki

Instructions

  1. Lightly mash half the chickpeas in a bowl.
  2. Add veggies, herbs, lemon juice/zest, oil, garlic, and seasoning. Mix well.
  3. Spoon onto lettuce leaves or wraps.
  4. Add optional toppings. Roll, fold, or serve as-is!
