1 (15 oz) can chickpeas, rinsed and drained

½ cup diced cucumber

½ cup halved cherry tomatoes

⅓ cup diced red onion

¼ cup kalamata olives, sliced

1 tbsp dill, chopped

Zest + juice of 1 lemon

1½ tbsp olive oil

1 garlic clove, minced

Salt & pepper to taste

Lettuce leaves or wraps for serving

Optional: hummus, sprouts, avocado, or tzatziki
Instructions
- Lightly mash half the chickpeas in a bowl.
- Add veggies, herbs, lemon juice/zest, oil, garlic, and seasoning. Mix well.
- Spoon onto lettuce leaves or wraps.
- Add optional toppings. Roll, fold, or serve as-is!
