- 1 tbsp olive oil
- 1 tbsp cornstarch + 2 tbsp water (for thickening, optional)

Prepare the Chicken
- Pat dry the chicken thighs or breasts, then season with salt and pepper.

Sear the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken on both sides until golden brown (about 4–5 minutes per side). Remove from skillet and set aside.

Make the Honey Glaze
- In the same skillet, melt butter and sauté garlic until fragrant.
- Stir in honey, soy sauce, Dijon mustard, vinegar, and chili flakes.
- Simmer for 2–3 minutes until the sauce slightly thickens.

Coat & Cook the Chicken
- Return the chicken to the skillet, coating it in the honey glaze.
- Cook for 5–7 minutes, spooning the sauce over the chicken as it caramelizes.
- If using cornstarch, mix it with 2 tbsp water, add to the skillet, and stir to thicken.

- Sprinkle with chopped parsley or green onions.
- Serve with steamed rice, roasted veggies, or mashed potatoes.
