For the Chicken:

  • 1 lb chicken breast or thighs (bite-sized)

  • ½ cup flour

  • Salt, pepper, ½ tsp garlic powder

  • 23 tbsp vegetable oil

  • ¼ cup honey

  • 2 tbsp soy sauce

  • 1 tbsp apple cider vinegar (or lemon juice)

  • 1 tbsp water

  • ½ tsp red pepper flakes (optional)

For the Mac and Cheese:

  • 8 oz elbow macaroni

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups milk

  • 1½ cups shredded cheddar cheese

  • ¼ cup cream cheese (optional)

  • Salt, pepper, pinch of paprika or mustard powder

Instructions

Boil pasta until al dente.

Make cheese sauce: butter + flour, whisk in milk, melt cheese. Fold in pasta.

Dredge chicken in flour, pan-fry until golden.

Simmer honey, soy, vinegar, water into glaze.

Toss chicken in glaze. Serve hot over mac and cheese.
