Ingredients

  • 2 boneless chicken breasts

  • 2 ripe peaches, halved and pitted

  • 6 cups mixed greens (arugula, spinach, spring mix)

  • ½ cup crumbled goat cheese or feta

  • ¼ cup toasted pecans or almonds

  • 2 tbsp chopped fresh basil or mint

  • Olive oil, salt & pepper

Honey Balsamic Vinaigrette

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp honey

  • ½ tsp Dijon mustard

  • Salt and pepper, to taste

Instructions

  1. Grill seasoned chicken and peaches until golden; slice both.
  2. Whisk vinaigrette ingredients until combined.
  3. Layer greens in bowl, top with chicken, peaches, cheese, nuts, and herbs.
  4. Drizzle with vinaigrette and serve fresh.
