2 boneless chicken breasts

2 ripe peaches, halved and pitted

6 cups mixed greens (arugula, spinach, spring mix)

½ cup crumbled goat cheese or feta

¼ cup toasted pecans or almonds

Honey Balsamic Vinaigrette

3 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp honey

½ tsp Dijon mustard

Salt and pepper, to taste
Instructions
- Grill seasoned chicken and peaches until golden; slice both.
- Whisk vinaigrette ingredients until combined.
- Layer greens in bowl, top with chicken, peaches, cheese, nuts, and herbs.
- Drizzle with vinaigrette and serve fresh.
