¼ cup mayonnaise (plus more to taste)

1 tsp Dijon mustard

1 tbsp finely chopped chives or green onions

1 tbsp finely chopped celery (optional)

Instructions
- Boil eggs, cool in ice bath, peel and chop.
- Mix mayo, mustard, lemon juice, salt, and pepper.
- Fold dressing into chopped eggs, add chives and celery.
- Chill or serve immediately on bread, wraps, or crackers.
