Ingredients

  • ½ cup all-purpose flour

  • ½ cup whole milk

  • 1 tbsp sugar (optional for sweet)

  • ½ tsp vanilla extract (optional)

  • Pinch of salt

  • 2 tbsp unsalted butter

Optional Toppings

  • Powdered sugar

  • Fresh berries

  • Lemon juice/zest

  • Maple syrup

  • Yogurt or whipped cream

Instructions

  1. Preheat oven to 425°F with cast iron skillet inside.
  2. Blend eggs, milk, flour, sugar, salt, and vanilla. Rest 10–15 min.
  3. Melt butter in hot skillet, swirl to coat.
  4. Pour batter in, bake 18–22 min until puffed and golden.
  5. Serve immediately with toppings.
