For the Salad

3 cups shredded napa or green cabbage

1 cup red cabbage, shredded

1 large carrot, julienned or shredded

1 red bell pepper, thinly sliced

2 scallions, thinly sliced

¼ cup chopped cilantro or mint

¼ cup toasted sliced almonds

1 tbsp toasted sesame seeds
For the Sesame Ginger Dressing

3 tbsp rice vinegar
-
1 tbsp soy sauce or tamari

1 tbsp sesame oil
-
2 tbsp neutral oil (avocado or grapeseed)

1 tbsp maple syrup or honey

1 tsp grated fresh ginger

1 garlic clove, minced

Juice of ½ lime (optional)

Salt + pepper, to taste
Instructions
- Whisk dressing ingredients in a bowl or jar.
- Toss all veggies and herbs in a large bowl.
- Add dressing and mix well to coat.
- Top with almonds + sesame seeds. Serve fresh or chill.
