Ingredients
For the Soup:
- 1 lb ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can diced tomatoes
- 4 cups beef broth
- 1 (15 oz) can tomato sauce
- 2 tbsp tomato paste
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 1 tsp dried basil
- 1 tsp dried oregano
- ½ tsp red pepper flakes (optional for heat)
- 8 lasagna noodles, broken into pieces
For the Cheese Topping:
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- 1 tbsp fresh parsley or basil, chopped
💡 Ingredient Swap: Use ground turkey or chicken instead of beef for a lighter version!
Instructions
1️⃣ Brown the Meat:
In a skillet, cook ground beef (or sausage) and onion over medium heat until browned.
Add garlic and cook for 1 minute, then drain excess grease.
2️⃣ Slow Cook the Soup:
Add browned meat, crushed tomatoes, diced tomatoes, broth, tomato sauce, tomato paste, and all seasonings to the crockpot.
Stir well, cover, and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
3️⃣ Add the Pasta:
In the last 30 minutes of cooking, stir in broken lasagna noodles and let them soften.
4️⃣ Prepare the Cheese Topping:
In a small bowl, mix ricotta, mozzarella, and Parmesan.
5️⃣ Serve & Enjoy:
Ladle soup into bowls, top with a dollop of cheesy topping, and sprinkle with fresh basil or parsley.
