  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (or oil from sun-dried tomatoes)
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ cup sun-dried tomatoes (oil-packed, chopped)
  • 1 (14 oz) can artichoke hearts, drained and halved
  • 1 cup chicken broth
  • Juice of ½ lemon (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Season and sear chicken in olive oil until golden and cooked through. Remove and set aside.
  2. Sauté garlic, sun-dried tomatoes, and Italian seasoning in the same pan.
  3. Deglaze with broth and lemon juice; simmer to reduce slightly.
  4. Add artichokes and return chicken to pan. Simmer 5–7 mins.
  5. Garnish and serve with rice, potatoes, or greens.
