Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1 small onion, sliced
- 4 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ cup chicken broth
- Juice of ½ lemon + lemon slices
- ½ cup green olives
- ½ cup kalamata olives
- Salt & pepper, to taste
- Fresh parsley or cilantro (for garnish)
Instructions
1️⃣ Sear Chicken:
Season chicken and sear in olive oil until golden brown. Remove and set aside.
2️⃣ Sauté Aromatics:
In the same pan, cook onion and garlic until soft. Add spices and stir.
3️⃣ Deglaze & Simmer:
Pour in broth and wine (if using) to deglaze pan. Add lemon juice, olives, and lemon slices.
4️⃣ Simmer Chicken:
Return chicken to the pan. Cover and simmer on low for 25–30 minutes until cooked through.
5️⃣ Serve:
Garnish with fresh herbs and serve with your favorite side.
