For the Chicken:
- 1 lb boneless, skinless chicken breast, sliced into strips
- 1½ tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt & black pepper, to taste
For the Pasta & Sauce:
- 8 oz pasta (fettuccine, penne, or linguine)
- 2 tbsp butter
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1½ cups heavy cream (or half-and-half)
- ½ cup grated Parmesan cheese
- ¼ tsp crushed red pepper flakes (optional)
- Juice of ½ lemon (optional)
- Fresh parsley, for garnish
Instructions
- Cook Pasta – Boil until al dente, drain, and set aside (reserve ½ cup pasta water).
- Cook Chicken – Season with Cajun seasoning and sauté in olive oil until cooked through; set aside.
- Sauté Veggies – In the same skillet, cook bell peppers in butter. Add garlic and cook briefly.
- Make Sauce – Add cream, Parmesan, red pepper flakes, and lemon juice; simmer until slightly thickened.
- Combine – Add pasta and chicken back to skillet. Toss to coat. Use reserved pasta water to loosen if needed.
- Serve – Garnish with fresh parsley and more Parmesan. Serve hot!
