Cadbury Egg Cookies – Soft, Chewy & Perfect for Spring Baking

Soft, chewy cookies filled with melty milk chocolate and pastel candy crunch. These festive spring cookies are fun, easy to make, and irresistibly beautiful-perfect for Easter or anytime you want a little joy in a bite.

Ingredients

  • 1 cup unsalted butter, softened

  • ¾ cup brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2¼ cups all-purpose flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1½ cups Mini Cadbury Eggs, chopped

  • Optional: ½ cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F. Line baking sheets.
  2. Cream butter + sugars. Mix in eggs and vanilla.
  3. Stir in dry ingredients. Fold in Cadbury Eggs.
  4. Scoop and bake 9–11 min. Press extra candy on top. Cool and serve.
