Ingredients

  • 4 salmon fillets

  • 2 cups broccoli florets

  • 1 red bell pepper, sliced

  • 1 cup carrots, sliced

  • Olive oil, salt, and pepper

Teriyaki Sauce:

  • Soy sauce or tamari

  • Honey or maple syrup

  • Rice vinegar

  • Sesame oil

  • Fresh garlic & ginger

  • Cornstarch slurry (to thicken)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Whisk teriyaki sauce in a pan, thicken, then set aside.
  3. Add veggies to one side of a sheet pan, drizzle with oil, and season.
  4. Place salmon on the other side. Brush with teriyaki sauce.
  5. Bake for 12–15 minutes.
  6. Garnish with sesame seeds and green onions. Serve warm.
