  • 2 to 2.5 lb boneless chuck roast
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp paprika (optional)
  • 3/4 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • Optional: 1 tbsp coconut aminos or balsamic vinegar

Instructions

  1. Let the chuck roast come to room temperature before cooking.
  2. Pat it dry with a paper towel.
  3. Rub the roast with olive oil, then coat evenly with spices.
  4. Preheat the air fryer to 390°F.
  5. Place roast in a foil-lined basket.
  6. Cook at 390°F for 15 minutes to develop a crust.
  7. Reduce temperature to 320°F and continue cooking for 45–60 minutes.
  8. Flip roast halfway through for even cooking.
  9. Check internal temperature: 145°F for medium, 160°F for medium-well.
  10. Remove and let rest for 10 minutes before slicing.
