- 2 to 2.5 lb boneless chuck roast
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp paprika (optional)
- 3/4 tsp salt (or to taste)
- 1/2 tsp black pepper
- Optional: 1 tbsp coconut aminos or balsamic vinegar
Instructions
- Let the chuck roast come to room temperature before cooking.
- Pat it dry with a paper towel.
- Rub the roast with olive oil, then coat evenly with spices.
- Preheat the air fryer to 390°F.
- Place roast in a foil-lined basket.
- Cook at 390°F for 15 minutes to develop a crust.
- Reduce temperature to 320°F and continue cooking for 45–60 minutes.
- Flip roast halfway through for even cooking.
- Check internal temperature: 145°F for medium, 160°F for medium-well.
- Remove and let rest for 10 minutes before slicing.
